Frances McDonagh’s Apple and Sugar Crunch Cakes

This was a totally experimental recipe by my mother – and the result was scrumptious buns which are impossible to resist!

Makes 18 buns
Preparation time: 10-15 minutes
Cooking time: 20 minutes

Ingredients:

  • 6 oz self raising flour
  • 2 eggs
  • 5 oz chopped cooking apple 
  • 4 oz margarine 
  • 4 oz castor sugar
  • 1 tbsp milk 
  • 1½ tsp baking powder
  • ½ tsp nutmeg
  • ½ tsp cinnamon

To Cook:

  1. Cream together the sugar and margarine
  2. Into a separate bowl sieve the flour, baking powder and spices 
  3. Add the prepared flour into the creamed mixture and fold together 
  4. Beat the eggs, and add to the mixture. Mix thoroughly 
  5. Add the chopped apple and milk and mix well 
  6. Spoon the mixture into bun cases and bake on a baking tray in a preheated oven at 220˚C/425˚ F/Gas 7 for 15-20 minutes
