My mother used to make these every Saturday morning when we were young, the smell of baking used to waft through the house and would rise us from our beds faster than any alarm clock!
Makes 8 to 10 buns
Preparation time: 15 mins. Cooking time: 15 mins.
Ingredients:
- 8oz self raising flour
- 4oz butter
- 4oz soft light brown sugar
- 3oz currants
- 1oz chopped glacé cherries
- 1oz chopped candied peel
- Pinch of nutmeg
- Pinch of salt
- 1 egg
- A little milk
To Prepare:
- Sift the flour and salt and then rub in the butter.
- Add the sugar, currants, cherries, peel and nutmeg.
- Beat up the egg with a little milk and add to the dry ingredients.
- Mix with a fork to a stiff mixture.
- Grease a baking tray and place the mixture in rough heaps.
- Bake for 15 minutes in a pre-heated oven at 400ºF/200ºC/Gas mark 6 in the middle shelf.
- Perfect served with a pot of Irish tea!
Clodagh's Top Tip
Try substituting the dried fruits with pieces of chocolate for a kid’s or indeed an adult’s sweet treat.
