Tomato and Basil Sauce
Ingredients:
- 1 onion, thinly sliced
- 1 garlic clove, crushed
- 2 x 400g of chopped tomatoes
- 1 bunch of fresh basil leaves, torn
- SuperValu Cooks Ingredients Sea Salt
- SuperValu Cooks Ingredients Ground Black Pepper
- SuperValu Supreme Extra Virgin Olive Oil
Method:
- Heat a dollop of olive oil in a saucepan and gently saute the onion and garlic until softened. Stir in the tomatoes and season with salt and pepper. Leave to simmer for 10 minutes and then stir in the fresh basil.
Serve with:
Pasta, grilled or roasted fish or chicken
Alternatives:
- Add in 1 sliced red and yellow pepper for a peperonata sauce
- Add in 50g chopped kalamata with the basil for a southern Italian sauce
- Stir in 70g of soft goats cheese with the tomatoes for a creamy tomato sauce
- Saute 80g smoked bacon lardons with the onions for a smoky flavour
- Add in 1 tsp of dried chili flakes with the onions for a spicy flavour
