Roast Leg of Lamb with Rosemary and Garlic
Serves 6 people
Preparation time: 10 minutes, Cooking time: 1 - 1.5 hours
Ingredients:
- 1Leg of SuperValu Quality Irish Lamb (approx 2kg)
- 5cloves of garlic, peeled and split in half
- 1bunch of fresh SuperValu Rosemary
- Cooks Ingredients Sea Salt and freshly ground black pepper
- 20g SuperValu butter, softened
- Roasted vegetables, to serve
Ingredients for the mint sauce:
- 25g fresh SuperValu Mint leaves, chopped
- 1teaspoon SuperValu caster sugar
- 3tablespoons of SuperValu Cooks Ingredients white wine vinegar
- 4tablespoons of hot water
Method:
- Preheat the oven to 220ºC
- Make about ten 2.5cm/1inch deep incisions in the leg of lamb
- Into each incision insert the garlic cloves and rosemary sprigs
- Rub the softened butter over the lamb and season with salt and pepper. Place the lamb in roasting tray on top of your favourite vegetables for roasting
- Roast in the oven for 1 1/2 hours turning the leg of lamb over half way through and basting occasionally
To make the mint sauce:
Mix all the ingredients together and stand for 20 minutes to allow the mint flavour to develop.
Serve the lamb with roasted seasonal vegetables, roast potatoes and the fresh mint sauce.
