Marie McInerney’s Nana’s Stew

My Nana gave me this recipe 3 months before she passed away. I make this delicious stew for my 1 year old daughter who loves it. I am so proud that Nana gave me this opportunity to cook for her great-granddaughter.

Serves 2
Preparation time: 10 minutes
Cooking time: 60 minutes

Ingredients:

  • 1 lb lean beef or lamb pieces
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 clove of garlic, finely chopped
  • 1/2 pint chicken stock
  • 1 large potato, peeled and grated
  • salt and pepper

To Cook:

  1. Preheat the oven to 180˚C/350˚F/Gas 4
  2. Fry the meat in olive oil until brown (about 3-4 minutes) and then transfer to a casserole dish. Fry the onion, tomato and garlic for 2-3 minutes until soft.
  3. Next add the chicken stock and potato (this thickens the sauce). Taste, and season as required Simmer for 5 minutes and then add to casserole dish.
  4. Put the casserole dish in the oven for 40 - 50 minutes until the meat is tender.
  5. Serve with creamed mashed potatoes and sliced carrots.
