Noreen O’Kelly’s Oat and Apple Meat Balls

One day I experimented with oats and grated apple in my meatballs and it went down a treat! Everyone loved it, and it’s been a family favourite ever since!

Serves 6
Preparation time: 25 minutes
Cooking time: 30 minutes

Ingredients:

  • 454g SuperValu mince
  • 1 medium onion, chopped 
  • 1 medium apple, grated
  • 250g Flahavan’s Oatlets or similar 
  • 1 egg, beaten 
  • Good pinch of mixed herbs 
  • 1 packet oxtail or tomato Soup or your own favourite pasta sauce

To Cook:

  1. Preheat the oven to 180˚C
  2. Mix the mince, onion, apple, oatlets and herbs in a large bowl.
  3. Add the beaten egg and mix again. 
  4. Shape the mixture into balls and brown them lightly in a frying pan. 
  5. Transfer the meatballs into an ovenproof dish. 
  6. Make up the soup and pour this, or your own pasta sauce over the meatballs. 
  7. Cook in the oven for approx 30 minutes. 
  8. Serve with pasta.
