When I was growing up my Dad used to come home at lunchtime to prepare our dinner. Even though we were on a tight budget he would always manage to prepare a delicious dinner and dessert. This is one of my favourite desserts that he would make.

Serves: 4
Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients:

  • 4 cooking apples
  • 2 tsp runny honey
  • 15g butter
  • Whipped cream, to serve
  • 100g brown sugar
  • 2 tsp ground cinnamon
  • 16 cloves

Method:

  1. Remove the cores of the apples with an apple corer.
  2. With a teaspoon, enlarge the cavity to double its size.
  3. Fill each apple with the brown sugar, honey and cinnamon, and place a small knob of butter on top.
  4. Pierce each apple with 4 cloves.
  5. Place the apples in a baking dish and cook in a preheated oven at 180°C for 20 minutes.
  6. Serve hot with whipped cream.

Our Wine Recommendation:

Enjoy with a dessert wine such as Cookoothama Botrytis Semillon (375ml €15.99). Layers of rich honey, orange and cinnamon with a mouthwatering fresh citrus twist on the finish. A really beautiful wine, enjoyed very well chilled.
