When I was growing up my Dad used to come home at lunchtime to prepare our dinner. Even though we were on a tight budget he would always manage to prepare a delicious dinner and dessert. This is one of my favourite desserts that he would make.
Serves: 4
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients:
- 4 cooking apples
- 2 tsp runny honey
- 15g butter
- Whipped cream, to serve
- 100g brown sugar
- 2 tsp ground cinnamon
- 16 cloves
Method:
- Remove the cores of the apples with an apple corer.
- With a teaspoon, enlarge the cavity to double its size.
- Fill each apple with the brown sugar, honey and cinnamon, and place a small knob of butter on top.
- Pierce each apple with 4 cloves.
- Place the apples in a baking dish and cook in a preheated oven at 180°C for 20 minutes.
- Serve hot with whipped cream.

Our Wine Recommendation:
Enjoy with a dessert wine such as Cookoothama Botrytis Semillon (375ml €15.99). Layers of rich honey, orange and cinnamon with a mouthwatering fresh citrus twist on the finish. A really beautiful wine, enjoyed very well chilled.
