This is a very simple muffin recipe and you can subsitute the dried fruits and nuts with whatever combinations you like!
Serves: 12
Preparation time: 15 minutes,
Chilling time: 20 minutes
Ingredients:
- 400g SuperValu Plain Flour
- 85g SuperValu Butter
- 150g SuperValu Caster Sugar
- 2 SuperValu Large Free Range Eggs
- 280ml buttermilk
- 1 tbsp baking powder
- 50g SuperValu Goodness Walnuts or SuperValu Goodness Almonds,
chopped finely
- 200g SuperValu Mixed Fruits, finely chopped
Method:
In a large bowl cream together the butter and sugar and then stir in the buttermilk followed by the 2 eggs and mix well. Slowly mix in the flour and baking powder. When the mixture is well creamed together fold in the dried fruit and nuts. Fill your muffin cases about three quarters of the way up and place in a pre-heated oven at 200°C for 20 minutes.
Clodagh’s Top Tip:
- For Banana and Walnut Muffins: Substitue the dried fruits with 2 mashed ripe bananas, 50g walnuts and 1 teaspoon of cinnamon
- wholemeal flour and 150g wheat bran and use brown sugar instead of caster sugar
