Serves 6
Preparation & Cooking time: 15 - 20 minutes plus chilling time (approx 2 hours)
Ingredients:
- 350g of assorted mushrooms
- 4 smoked bacon rashers, cooked
- 2 tablespoons of cream cheese
- 1 large white onion
- 1 garlic clove
- Oil & butter to fry
- Salt & Pepper
- Fresh herbs of your choice
Preparation:
- Sauté the chopped onion, garlic and mushrooms in a hot pan with
some butter and oil until coloured
- Season the mix well, then add the chopped fresh herbs and pop
into a food processor with the cooked bacon
- Proceed to blend to achieve a relatively smooth mix
- Allow to cool, then add in the cream cheese and mix well
- Serve the cooled paté on hot buttered toasts – delicious!
Phelim’s Top Tip:
You can easily make this as a vegetarian dish instead – just use 4 tablespoons of toasted nuts instead of the bacon.
