Serves 6
Preparation & Cooking time: 15 - 20 minutes plus chilling time (approx 2 hours)

Ingredients:

  • 350g of assorted mushrooms
  • 4 smoked bacon rashers, cooked
  • 2 tablespoons of cream cheese
  • 1 large white onion
  • 1 garlic clove
  • Oil & butter to fry
  • Salt & Pepper
  • Fresh herbs of your choice

Preparation:

  1. Sauté the chopped onion, garlic and mushrooms in a hot pan with
some butter and oil until coloured
  2. Season the mix well, then add the chopped fresh herbs and pop
into a food processor with the cooked bacon
  3. Proceed to blend to achieve a relatively smooth mix
  4. Allow to cool, then add in the cream cheese and mix well
  5. Serve the cooled paté on hot buttered toasts – delicious!

Phelim’s Top Tip:

You can easily make this as a vegetarian dish instead – just use 4 tablespoons of toasted nuts instead of the bacon.
