Pineapple & Strawberry Fruit Skewers with Lime & Mint sugar

These are light and refreshing, and fun for all to eat!

Serves 4 - 6
Preparation time: 20 minutes
No cooking time required

Ingredients:

  • Handful of fresh mint leaves
  • 2 tablespoons soft brown sugar
  • Juice of two limes
  • 1 pineapple, peeled and chopped into chunks
  • 1 punnet strawberries, sliced in half

Method: 

  1. Roughly chop the mint leaves and add the sugar. If you have a pestle and mortar, this would be handy to use, if not chop by hand or blend in a processor.
  2. Mix in the lime juice and taste.
  3. Add more sugar or lime juice as required, or some water if you would like to make it weaker.
  4. Put the pineapple and strawberries on skewers and serve, dipping into the mint sugar or pouring some of the mint sugar on top.

Domini's Top Tip:

Make sure to supervise kids carefully when using the bamboo skewers as they have sharp ends.
