Summer Insalata Riso

Serves 4
Preparation time: 10 minutes
Cooking time: 10-12 minutes

Ingredients:

  • 100g SuperValu Basmati Rice
  • 50g SuperValu garden peas
  • 50g SuperValu Sweetcorn
  • 100g SuperValu Supreme Cherry Tomatoes (halved)
  • Hard boiled SuperValu Free Range Eggs
  • Juice of 1 lemon
  • SuperValu Supreme Extra Virgin Olive Oil
  • SuperValu Cooks’ Ingredients Sea Salt and freshly
    ground Black Pepper

Method:

  1. Firstly cook the rice in accordance with the pack instructions and leave to cool. 
  2. When cooled, place the rice in a large bowl and mix in the sweetcorn, peas and halved cherry tomatoes.
  3. Cut the hardboiled eggs into quarters, then half again and toss into the rice.
  4. Add in a good dollop of extra virgin olive oil and the lemon juice.
  5. Season with the salt and pepper and mix well.

 

Clodagh’s Top Tip:

  • You can also use wild rice instead of Basmati rice. This salad makes a really nutritious lunch, so don’t forget to make some extra and pop it in a lunch box to bring to work or for the kids to bring to school!
