Cooking time: 10-12 minutes
Ingredients:
- 100g SuperValu Basmati Rice
- 50g SuperValu garden peas
- 50g SuperValu Sweetcorn
- 100g SuperValu Supreme Cherry Tomatoes (halved)
- Hard boiled SuperValu Free Range Eggs
- Juice of 1 lemon
- SuperValu Supreme Extra Virgin Olive Oil
- SuperValu Cooks’ Ingredients Sea Salt and freshly
ground Black Pepper
Method:
- Firstly cook the rice in accordance with the pack instructions and leave to cool.
- When cooled, place the rice in a large bowl and mix in the sweetcorn, peas and halved cherry tomatoes.
- Cut the hardboiled eggs into quarters, then half again and toss into the rice.
- Add in a good dollop of extra virgin olive oil and the lemon juice.
- Season with the salt and pepper and mix well.
Clodagh’s Top Tip:
- You can also use wild rice instead of Basmati rice. This salad makes a really nutritious lunch, so don’t forget to make some extra and pop it in a lunch box to bring to work or for the kids to bring to school!
