3 Great BBQ Marinades

Marinating meat, chicken, fish or vegetables is a great way to add a twist to your BBQ this summer. Here are three quick and easy suggestions.

Serves 4
Preparation Time: 10 minutes (plus 30 mins or overnight for marinating)

Cooking time: 15-20 minutes

Ingredients

Spicy Marinade - Delicious for Meats

  • 1/2 cup SuperValu Supreme Extra Virgin Olive Oil
  • 2 tbsp fresh lemon juice
  • 2 tbsp Dijon mustard
  • 1/2tsp SuperValu Cooks’ Ingredients Chilli Flakes

Indian Marinade - Delicious for Chicken or Lamb

  • 1/2 cup natural yogurt
  • 2 tbsp SuperValu Sunflower Oil
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/2tsp ground coriander
  • 1 tbsp chopped SuperValu fresh coriander

Asian Marinade - Delicious for Fish

  • 1/2 cup SuperValu Sunflower Oil
  • 1/4 cup SuperValu Cooks’ Ingredients White Wine Vinegar
  • 3 tbsp SuperValu Cooks’ Ingredients Soy Sauce
  • 3 tbsp chopped fresh ginger
  • 2 tbsp SuperValu Caster Sugar

Method

  1. To make each of the marinades, simply place all the ingredients in a bowl and mix well.
  2. Cut the chicken/lamb/beef/fish/vegetables (whichever you are using) up into 1 inch pieces, season with salt and pepper.
  3. Put in a large bowl and cover with the marinade. Cover and place in a fridge overnight or for at least half an hour if you are making them last minute.
  4. The next day put the meat, chicken or fish onto skewers and then onto the BBQ.
  5. Cook on each side for 5-8 minutes, depending on the heat of the BBQ.

Clodagh’s Top Tips:

If you’re using wooden skewers, remember to wet them first to ensure they don’t go on fire! Simply drop them into a bowl of water for a couple of minutes until they are damp through.
